Two Delicious Fall Desserts

Great Fall Dessert Ideas


As the seasons change and the temperature begins to get cooler, there’s no better way to warm your home and make your family happy than by creating delicious, comforting oven-baked desserts. One way to get the most out of your fall desserts is to utilize seasonal recipes that call for the use of seasonal fruits and vegetables such as pumpkin and apple. Seasonal vegetables and fruits not only taste better, but they are also more budget-friendly.  Try out the following two recipes that utilize this season’s best produce to create great desserts this fall.

The first recipe is a quick alternative to apple pie that allows you to get the same delicious flavors we all love without the added calories of pie crust, and in a fraction of the time. This recipe is a great snack or dessert, and is a great way to use those apples you may have gathered on your latest apple-picking trip. Feel free to make your apples without nuts, or add your favorite type of nuts in place of walnuts.

Easy ‘Baked’ Apples

     Serves   4

Prep time   5 minutes

Cook time  4 minutes

Ingredients

  • PAM® Original No-Stick Cooking Spray
  • 2 large Braeburn or Jonagold apples, cut in half
  • 2 tablespoons dried cranberries
  • 2 tablespoons chopped walnuts
  • 2 tablespoons firmly packed light brown sugar
  • 2 tablespoons Parkay® Original Spread-tub
  • 1/4 teaspoon ground cinnamon
  • Reddi-wip® Fat Free Dairy Whipped Topping

Directions

Spray 8×8-inch glass baking dish with cooking spray; set aside. Remove core from apples; place cut-side up in dish. Combine cranberries, walnuts, brown sugar, Parkay and cinnamon in small bowl. Place 1 tablespoon mixture in center of each apple half. Cover dish with plastic wrap, turning back 1 corner to vent. Microwave on high 4 minutes or until apples are tender. Top with Reddi-wip® Dairy Whipped Topping once slightly cooled.

The next recipe is a true seasonal staple. Fall wouldn’t be fall without delicious pumpkin desserts. This recipe is great when you want a homemade cake without the fuss. By using a store-bought cake mix and seasonal, fresh pumpkin, you can create gourmet, homemade cakes that will give you the best taste of fall around.

Quick and Easy Pumpkin Cake

Ingredients

  • PAM® Baking Spray
  • 1 pkg (18.5 oz each) yellow cake mix with pudding
  • 1 cup pumpkin
  • 3/4 cup Egg Beaters® Original or Egg Beaters® 100% Liquid Egg Whites
  • 1/2 cup water
  • 1/4 cup fat free sour cream
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • Reddi-wip® Fat Free Dairy Whipped Topping

Directions

Preheat oven to 350°F. Spray 13×9-inch baking pan with cooking spray. Combine cake mix, pumpkin, Egg Beaters, water, sour cream, cinnamon, nutmeg and ginger in large bowl. Beat with electric mixer on low speed just until moistened. Beat on high speed 2 minutes. Pour into prepared baking pan. Bake 40 minutes, or until wooden pick inserted in center comes out clean. Cool. Cut into 12 slices. Top each with a serving of Reddi-wip just before serving. Sprinkle with additional cinnamon, if desired.
