With today being the 12 year anniversary of September 11, hubby thought it would be nice to do a red, white and blue breakfast in honor of America. He was in the US Navy stationed in Rota, Spain in the 1980’s. He’s very proud of this and today works for our local VA Hospital. With me still being down with my surgery, breakfast was on him so he made this pancake recipe.
It’s quite simple. Take your favorite pancake mix (or make your own) and add chopped strawberries and blueberries.
Scoop about 3/4 cup of the pancake mix and pour onto your pancake griddle or frying pan.
Cook until the edges start to stiffen up then flip. Cook until golden brown. Look at hubby rying to flip the cake. He actually did too, but I didn’t get a picture of it. I thought it would become cat food as it was flying through the air, but he caught it in the pan and breakfast was safe1
The whipped cream, extra fruit and sprinkles give this a nice patriotic look to them. Breakfast was delicious and our hearts were there for all the folks affected by September 11th. Have a great day everyone.
