Garlicky Chicken ingredients
2 boneless, skinless chicken breasts
1/4 cup Grandma Sandinos vegetarian garlic sauce
1/2 cup cherry tomatoes sliced in half
1 ounce goat cheese
1 Tablespoon Balsamic Vinegar
1 slice prosciutto, chopped
5 green olives, sliced
4 strips of sun dried tomatoes
Cut the chicken lengthwise down the center to form two strips. Cover with Granda Sandino’s sauce, being sure to coat all sides of the chicken. Cover and refrigerate for at least two hours.
On a piece of foil big enough to wrap around the chicken, place two strips and add tomatoes, goat cheese, and balsamic vinegar.
For the other packet, add the sun dried tomatoes, prosciutto, green olives and sun dried tomatoes. Split any remaining marinade between the two packets. Wrap up both pieces and cook on the grill over medium to high heat for 15-20 minutes depending on the thickness of your chicken piece.
Your result are two foil packets with uniquely different flavors but both containing some juicy flavorful chicken breasts. By cooking inside of a foil packet, your chicken picks up all the flavors and retains it’s juices and does not dry out. No one likes dry rubbery chicken right? You won’t be disappointed in these.
Not only are these flavorful but they sure are pretty too!! I love food that is also colorful too. When you fill your plate with a variety of colors, it usually means you’re getting a good variety. Variety is the spice of life, right? Enjoy!
