Easy garlicky chicken recipe that is cooked in foil on the grill for easy clean up and to ensure a nice juciy piece of chicken that picks up the flavors of all that it is packed with. And this dinner is easily customized so everyone in the family can satisfy their own picky pallette.
Hubby and I do have some very different tastes when it comes to food. He & I both grew up in “meat and potatoes” families. We have both also travelled extensivly and have had the opportunity to taste foods from all parts of the world. But…. we still have our differences. These foil packs make it easy to cook something we both like without having to prepare two entirely differnet dinners. This also works well with families that have food allergies since you can design your packet to meet your food needs.
This loos like an easy meal that will taste great, with a few minor changes. I love that there are no dishes!

What could I use as a substitute for the Grandma Sandinos? I have never heard of it.
You can use any garlic style sauce at the grocery store. You can also use a garlic salad dressing and my favorite substitute would be Paul Newman’s Light Roasted Garlic Balsamic Dressing. I think it’s the closest to Grandma Sandino’s on the market. I know they sell Newman’s at Wal-Mart, Smiths (Kroger) and Whole Foods. If you make it, let me know what you think!
That is a great suggestion, I am sure I can find the Newman’s. I have done campfire chicken before and this is similar. I’m sure it will be delicious. Of course it has olives, so it has to be.
