If you are like me, you have a bounty of fresh zucchini and yellow squash either from your own garden or from a family member or friends garden. I have received numerous zucchini’s this year so far and I’ve been grilling, frying, and chopping them into salads and other dishes. Here is an easy weeknight meal to prepare using your delicious squash, adding some shrimp and seasonings to get a tasty shrimp pasta dinner on the table quickly
Ingredients
1 lb angel hair pasta
8 oz shrimp
2 medium zucchini, cut into cubes
1 yellow squash, cut into cubes
2 cloves garlic, chopped
1 shallot, cut into rings
Olive oil
1 cup light white wine
Salt and pepper to taste
¾ Tablespoon Italian Seasoning
Boil the pasta according to package directions. In a deep skillet, add the olive oil and garlic and heat until garlic is partially cooked. Add the zucchini and squash and shallots. Cook until the zucchini and squash have softened. Remove.
Add the shrimp to the pan along with the Wine and Italian seasoning and cook until pink.
Add the vegetables back in and heat through. Add the tomatoes in.
Stir to blend the shrimp and veggies.
Doesn’t this squash and shrimp pasta look great? Yes it does and it tasted better then it looked. The fresh flavors of the squash was outstanding. I sprinkled a bit of goat cheese on top instead of Parmesan and it gave it a creamy flavor on top of everything else. This dinner can be easily made for those busy weeknights which will allow you time for other fun things, such as games with the kids or to curl up with a book.
