I have a quick and easy side dish for you today. I’ve been using a lot of mango this summer and it’s taken my dinners to new flavorful heights. This little gem is no exception. Talk about a super simple easy avocado mango salad side dish that is sweet, tangy and so full of fresh flavor!! All it takes are five ingredients to make this yummy dish.
What I like about mango is it’s fresh light taste. A lot of folks I know are unsure of what to do with a mango other then slice and eat. But, there is so much more to this versatile fruit. It can be blended into sauces and dressings as well as chopped up into a salad. I’ve even made ice cream with it. This quick and easy avocado mango salad is perfect as a side dish or even a light snack on a hot summer day.
Ingredients – Serves 2
1 ripe avocado, cut into cubes
1 ripe mango, cut into cubes
3-4 strips of jarred roasted red pepper
juice from two limes
2 Tablespoons chopped fresh cilantro
Directions
Mix it all together and you have a light, refreshing and super easy side dish to any meal. The roasted red peppers will not hold their shape in this, but that’s OK. You want it more for flavor anyway. You can also double the recipe and make it your main dish for a light lunch. Chill in the fridge if you are not going to eat it right away.
Garnish with lime wedges and enjoy your avocado mango salad!!
