In addition, three varieties of goat cheese and some fresh cut kiwi.
Just add pineapple shrimp and you have a fresh delicious salad!!
To cook the shrimp, take a cup of canned crushed pineapple, add a clove of chopped garlic, a pinch of crushed red pepper and toss it into a deep skillet. Add a pound of large shrimp and cook until the shrimp is pink.
I also made a homemade peach mango dressing. Take a half mango (peeled and chopped), a whole peach, 2-3 Tablespoons coconut oil and 2 Tablespoons honey and blend it in a food processor. Chill at least an hour before serving. It’s a nice thick light and refreshing dressing for your salad.
To assemble, just toss your lettuce, fruit and veggies in a bowl and top with the shrimp and goat cheese of choice. Drizzle the dressing on top and you’re done!
Sorry I have no pictures of the mango peach dressing…. I ate it before I could photograph it! But look at all the gorgeous colors of this fresh salad!! It’s a feast for the eyes as well as the taste buds.
