Savory Beef Stroganoff over Egg Noodles

Recipe for Beef
Comfort food at it’s finest!!  Beef Stroganoff is a favorite of mine especially on cold winter days when you are starving and want something warm and filling. I know it’s not winter now, but sometimes that craving hits and you just have to do something about it. Stroganoff is full of hearty goodness; steak, noodles and a rich creamy sauce. However, I substituted fat free sour cream and used lean beef to make this lighter yet still satisfying.
Ingredients

 1.5 pound of lean beef round or fillet of beef, sliced into two inch strips
salt and pepper, to taste<
Mrs. Dash steak seasoning, to taste
1 large clove garlic, chopped
3 tablespoons butter
1/2 pound fresh mushrooms, sliced
1 medium red onion, chopped
2 tablespoons all-purpose flour
2 cups low-sodium beef broth
2 tablespoons tomato paste
1 teaspoon dry mustard or 1 teaspoon Dijon mustard
3 tablespoons Marsala wine
1 cup sour cream
1 package wide egg noodles


Directions
 Cut the steak up into two inch strips then season with salt, pepper and Mrs. Dash to taste.   I let it sit in the fridge while I whipped up the rest. I wanted to let the seasonings really set in the meat.

 Add 2 Tablespoons of the butter to a large deep skillet and saute the mushrooms and onions until cooked through and the onions are translucent.
 Add the the last tablespoon of butter and garlic to the skillet. Cook until garlic is fragrant. Add the beef to the skillet and cook until brown on both sides. Do not cook all the way through. Remove and set aside, leaving any excess juices in the pan.
 Add the flour to the pan and stir. It will be quite thick. Slowly add the broth while stirring. Add the tomato paste, mustard and wine. Stir until well blended.
 Add the beef, mushrooms and onions back into the skillet and stir until well coated.
 Let the beef mix simmer for 20 minutes on low heat. When you have about 10 minutes left, cook the noodles according to package directions. Drain. When done simmering, blend in the sour cream until it’s a pretty red/beige color.
 Serve your beef stroganoff over the noodles. Spoon extra sauce over it if you like it saucy!
 Your taste buds will be delighted with the result of this!! Tender beef, creamy sauce and noodles. What more can you ask for in beef stroganoff? This dinner was not only good but budget friendly.
