Grilled Baby Red Potatoes – Spuds on a Stick!

Grilled Baby Red Potatoes
Ever thought about grilling potatoes? I sure did and these flavorful “spuds-on-a-stick”were a hit in my household. This is a nice alternative to baked potatoes to serve with steak, chops or seafood. I elected to cook my entire meal on the grill this time and skewered up some shrimp, veggies and, of course the star of the show, grilled baby red potatoes. 
 
Ingredients
2 pounds baby red potatoes
6 wooden skewers
1/2 cup mayonnaise
1/4 cup red wine
1 Tablespoon melted butter
2 cloves fresh garlic, minced
2 teaspoons parsley
Veggies and shrimp to add to skewers
 
Directions
If some of the baby potatoes are on the large side, cut them in half.  Baby potatoes usually come in a mesh bag in the produce section so you don’t always have the option of picking the perfect size. Soak the wooden skewers in water for 30 minutes. This will keep them from catching fire on the grill. 
 
In a microwave dish, steam the potatoes 3-4 minutes on high until partially cooked though. Remove and let cool. 
 
Mix the remaining ingredients together and toss the potatoes until coated. Let sit in the fridge for about 30 minutes to an hour.

Add the potatoes to wooden skewers, leaving some of the mayo mix in the bowl for additional basting. I skewered two with corn on the cob and the other two with cherry tomatoes. Hubby hates cherry tomatoes so those were all mine!!  I skewered shrimp and red onion on the last two.

Cook on a preheated griddle on the barbecue. We used the griddle so the potatoes and especially the tomatoes wouldn’t get so soft they would fall through the grates. I put the veggies on first and cooked for 6 minutes, flipping the skewers so they cook evenly.

Look at ’em sizzzle!!! Baste the potatoes with the mayo mix as they are cooking.

I then added the shrimp skewers and cooked them 3 minutes per side. Shrimp cooks very quickly, so you need to watch them to avoid overcooking. Overcooking shrimp will make them rubbery so cook until pink and a bit firm to the touch.

Serve with your choice of tossed salad. Another nice, light outdoor meal to share with family or for entertaining. Since these can be made in advance, you can whip up a bunch and serve at your next outdoor party.
