Swiss & Spinach Stuffed Pork Chops

This isn’t your run of the mill pork chop recipe. These are stuffed with spinach and cheese and loaded with goodness.

You probably looked at the picture above and thought that wasn’t a pork chop since it looks more like a clam on steroids. But, if you look close it’s a chop that has been butterflied part way through and stuffed with a mixture of spinach, Swiss cheese, bread crumbs and some seasonings. There are hundreds, if not thousands, of pork chop recipes out there and I thought, “Why not make stuffed pork chops?” A trip around the pantry and refrigerator and here is what I came up with.

This is an easy dish that is great for two and also wonderful for lunch leftovers the next day. You’ll be the envy of the office when you break this out for lunch. Your co-workers will want to trade their tuna sandwich in a heartbeat!
Since these do come out rather big, cut them in half unless you are starving.  Serve with your favorite side dish such as corn on the cob and couscous. Because they are cooked in wine, they came out so flavorful and moist. This recipe for stuffed pork chops is in my culinary rotation now.

    Wow, now that’s a pork chop! Love the creativity in stuffing the chop and what a tasty mix! It reminds me of a chicken cordon bleu – only with pork!

    These look fantastic. I love wine with pork and I would usually use fontina cheese but the swiss would add a whole different taste to them. I will definitly try them out, pork is my favorite meat so I am always looking for something new 🙂 Thanks!

    Hi, I made your pork chop recipe tonight. It was really good. Although, the tops of the pork chops were kind of dry. Do you usually bake this covered? I left it uncovered and thought maybe that was why they dried out…Thanks!

      Hmmm… not sure why it dried out but covering it never hurts. I’ll try that next time and see if it makes it so much better

    Very tasty recipe; I like to add sautéed sweet onion, chopped fresh mushrooms, and bacon to the stuffing mixture. It makes a good recipe even better.
