Baked Parsley Parmesan Tomatoes

When I met Hubby, he wouldn’t even look at a tomato. He would pull it out of a burger and give it to me, pick them out of salads and just avoid them altogether. For me, I grew up eating sliced fresh tomato with my meals and always ask for extra for my burger. However, as time has passed and I have been creative with how I incorporate tomatoes into my recipes, hubby has started to come around. Amazing…. or should I say it’s a miracle??  Last night, I made these parmesan tomatoes to go with steak and corn. I made sure to add two types of cheese since I thought that would have my cheese-lovin’ hubby wanting to try them.  Much to my surprise, Hubby inhaled a few. Isn’t it amazing how 3 years with a tomato-a-holic like me will change a person?

Parmesan Tomatoes Ingredients
2 roma tomatoes, sliced into fourths
1/4 cup olive oil
1/4 cup shaved fresh parmesan cheese
1/8 cup shaved fresh mozzarella cheese
1/4 cup seasoned bread crumbs
1/8 cup fresh parsley

Directions
Preheat oven to 350 degrees F.

Lay out the sliced tomatoes on a cookie sheet and drizzle them with the olive oil. Add the shaved parmesan to each slice, then the mozzarella. Sprinkle the bread crumbs on the slices and top with the chopped fresh parsley.

Baked Parmesan Tomatoes

Bake for 10 minutes or until cheese is melted. They should be a bit browned on top.

Boy are these good!! They make a perfect accompaniment to a main course or they can stand on their own as an appetizer for your next get together. I really like how the fresh basil flavor comes out on the parmesan tomatoes and it gives them a nice fresh flavor.  Hubby and I belong to a wine club and I think these may make an appearance at the next event.

    I love this! I grew up eating sliced tomatoes with a little salt and pepper. Hubs prefers them in a tomato sandwich. My kids hate them 🙁 lol. I’ll have to try this version out now!

    I also hated tomatoes growing up, and it was cheese that changed all that for me. There’s something about melted cheese over tomatoes that makes you see them in a whole different light!

    These look yummy – I can hardly wait for fresh tomatoes this summer!! Men!! They can be so fussy; mine won’t touch cucumbers, yet like pickles and tzatziki….go figure.
