Super Easy Roasted Parsley Red Potatoes

Want to make potatoes like a pro but don’t want to slave in the kitchen? Check out this recipe that is one of my hubby’s favorites. Hint: it’s super easy.

If you’re scratching your head on what to make as a side for dinner, put your hand down and check out this recipe. This is a quick and easy side dish to go with your grilled meats during the spring and summer months. I like to make this one for dinner parties as well and after reading this recipe, I’m sure you will to.

Po-tay-to, po-tah-to… however you say it, it’s probably one of the most versatile veggies ever.  Baked, fried, sautéed ….. the possibilities are endless. If you are short on time, this recipe takes ingredients you probably already have and makes an excellent side dish.

I love fresh parsley. It makes food taste so much fresher then using dried. Having the fresh parsley in this recipe really hit the mark.  Along with the basil and garlic, these are seasoned perfectly. Roasted parsley red potatoes make an excellent side dish for any steak, chicken or even fish. It is a recipe with lots of flavor for not a lot of effort.

Roasted Parsley Potatoes Ingredients

2 pounds red potatoes
1/4 cup olive oil
2 tablespoons mayonnaise
2 tablespoons garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh basil, chopped
1 tablespoon grated parmesan
salt & pepper to taste

 

Directions

Pre-heat the oven to 350 degrees. This could not be easier!!  Cut the red potatoes into chunks. In a separate bowl, mix the remaining ingredients. Mix in the potatoes until evenly covered.  The sauce should be thick since you want it to coat your red potatoes rather then soak them in a sauce bath.

These garlicky roasted parsley red potatoes are the perfect potato side dish to any meal. Meat and potatoes lovers - this one is for you!

Bake the potatoes in the oven for 30 minutes. I didn’t want mine too brown, so I put my potatoes in a Farberware Nonstick Bakeware 9-by-5-Inch Loaf Pan.This pan works best for this dish.

To give your potatoes more of a golden color, spread them out on a cookie sheet and maybe even hit the broiler for the last two minutes.  I didn’t want mine crispy like fries so I just stuck with the loaf pan.

Also, you can add crumbled bacon or crushed red pepper for some heat. It’s up to you!!  What would you add to your potatoes to make them extra special?

    Does it need to be 2 tablespoons mayonnaise or could you use Miracle Whip?

    I used this recipe, and added brussel sprouts to it. Some paprika, sriracha, chives, and a tad more parsley.
    Oh. My. God. Never thought of using mayo for roasting. BEST IDEA EVER!

    Hey, I’ve had your “Super Easy Red Roasted Parsley Potatoes” recipe in my Yummly folder forever because they’re so good. I’m making a new folder of easy delicious recipes for my granddaughter’s summer cooking class she asked me to give her…but the instructions for your potatoes are gone. Only thing left is a picture, comments & links to other recipes. Did you leave Yummly? Any idea how I can get it back if you didn’t? Thanks for great recipes I’m so looking forward to teaching my granddaughter to cook entire meals this summer!!
