Pot Roast Ingredients
1 – 2.5 pound beef rib roast
4 medium to large red potatoes
4 large carrots, peeled
half of a medium red onion
4 cloves of garlic
1 packet of Crock Pot Savory Pot Roast Seasoning
I seasoned the roast first with some course sea salt on both sides and then sliced two of the garlic cloves. I cut little slits into the roast and inserted the slices into the slits. My mom used to do that when she made her pot roast and it always gave it a yummy flavor. Plus, if anyone has read this blog long enough, you know how much we love garlic. Now that you have “garlicked it up,” place the roast in the slow cooker.
I mixed the seasoning with 1 cup of water until blended and poured it over my roast and veggies.
I set the slow cooker to high and sat back for the next four hours watching football and enjoying the aroma of my roast and veggies. My husband had to eat a cupcake to hold him over since he was getting so hungry. And the wait was worth it. Check out how delicious that looks!
The meat was so tender you can cut it with a butter knife and it sliced easily without falling apart.
And the flavor was rich, mouthwatering and not at all salty. Some seasoning mixes are so full of salt, but this was not. The veggies were flavorful and not mushy and my husband couldn’t get enough of them. I served it with rice and used the juices as a gravy. I liked how the water, the mix and the meat juices thickened up into a nice gravy.
