This is an easy southwest pasta salad recipe for those warm summer day picnics and good for potlucks too. This one is super tasty and has just enough heat to make your tastebuds stand up and take notice. I like the addition of the spicy ranch to give the southwest pasta salad some extra zip.
Ingredients
1/2 of a box of Great Value Radiatore
1/2 cup light mayonnaise
1/4 cup Spicy Ranch Dressing
1 medium red bell pepper, chopped
2 Tbsp Baco’s
1 Tbsp Mrs. Dash Chipotle seasoning
Dash of Salt and Pepper
1 small can green chilis (optional)
2 hard boiled eggs, sliced
Parsley
Directions
Cook pasta according to directions and drain. Mix the mayonnaise, ranch, red bell pepper, Mrs. Dash and the salt and pepper. Add the pasta and Bacos and mix thoroughly. Slice the hard boiled eggs and top the salad. Sprinkle with parsley.<
So simple yet so delicious. We go to a lot of potluck barbecues during the summer and this southwest pasta salad had been quite popular this year. It’s pretty easy to make too so when you get that last minute invite, you can throw this together in a snap.
