Delicious Meatloaf, BBQ Style!

June 9, 2012

Barbecue Meatloaf
1/2 pound chopped mushrooms
1 egg , slightly beaten
1-2 teaspoon Worcestershire sauce
1-2 tablespoons Country Bob’s All Purpose Sauce
1 teaspoon salt
1 teaspoon Mrs. Dash Steak Seasoning
1/2 teaspoon dry mustard
dash pepper
1 large clove garlic, chopped
1 1/2 cups soft breadcrumbs
2 pounds ground beef
1/4-1/2 cups barbecue sauce
1/2 cups of chopped onion

If you are using canned mushrooms, they should be drained first. I prefer to use fresh mushrooms, however I was short on time and didn’t want to run to the store, so I used canned.

In a mixing bowl, combine egg, Worcestershire, BBQ sauce, country bobs sauce, seasonings and bread crumbs. Let stand about 5 minutes.

Then add in the ground beef, mushrooms and chopped onion. Depending on how much you love onion in your meatloaf you can add and subtract the amount. I keep mine about 1/2 cup but load it up if you love onion. Same with the garlic. I like… OK LOVE garlic so I use a large clove, but again adjust to your taste.

Shape into a loaf and place on a lightly greased baking dish. Bake at 350 for 1 hour. Brush additional barbecue sauce on top and bake another 10-15 minutes.

Set your DoneRight Kitchen Timer (or other timer, but I love mine) and bake at 350 for 1 hour. Brush additional barbecue sauce on top and bake another 10-15 minutes.

I plugged this recipe into my Cook’n Recipe Organizer and the estimated nutrition value based on 10 servings is as follows: Calories, 237. Calories from fat 48. Total fat 16g. Sodium 873g. Cholesterol 65mg. Protein 17g.

Not too bad! Of course depending on what you add/subtract, it changes. This recipe is very tasty. I love the barbecue flavor in the meat and it stayed moist even with the long baking time. I served this with corn on the cob and pasta salad. YUM!!
