Pineapple Sweet Potato Rice
- 1 cup dry rice (any variety, cooked according to directions)
- 1 tablespoon olive oil
- 1 Medium sweet potato (peeled and diced)
- 1 Large shallot (cut into rings)
- salt and pepper to taste
- 3/4 cups pineapple tidbits (drained)
- 1 tablespoon butter
Again, you can use any of your favorite rice varieties. I chose jasmine rice this time around, but will for sure try with an instant brown rice for those days where I just don’t have time to wait for rice to cook. Pineapple and sweet potatoes go very well toghter and the flavors compliment each other. I love this side dish and I love this challenge!!!
