Welcome to Tickle My Tastebuds! This is a favorite day of mine where I see all the delicious creations you have come up with. If you have back yard chickens, then this is for you. This weeks features are all about the egg. I just love eggs and these recipes all contain the delicious egg.
We got chickens last fall. Nine of them. They were a bit slow in the egg production department at first, but have really ramped up since January. For May, we averaged 4.06 eggs per day. Yes, I keep track.
This past week, our littlest chicken, Sophia, dropped a monster egg. I mean, it was huge! I weighed it and it came in at a whopping 112 grams. A “normal” egg weighed 55 grams, so it was double. The poor girl must have been exhausted after that one.
Over the weekend, I cracked that bad boy open. I was curious to see if it was a double yolk or triple yolk, but it turned out to be an egg within an egg. Not a fully formed extra egg, but one that was partially done. The egg didn’t have a firm shell either and I broke it open to see more egg white, no yolk. I’ve heard of this happening, but this was a first for me.
I fried that egg for breakfast and it was just as delicious as the others. I did not cook the partial egg, I actually was too nervous to do that. What was left was a normal sized yolk and a whole lot of egg whites.
