Cinco de Mayo is right around the corner and I couldn’t be happier. Mexican food is an all time favorite of mine so I make Mexican inspired dishes often. And it just gets easier (and more fun) when you make tacos with Old El Paso Mini Taco Boats. It takes my black bean tacos new a whole new level.
Growing up, I was the only member of my family that liked Mexican food. Mom didn’t, sis didn’t (she does now) but Dad and I did. We had daddy/daughter dinner nights out once in awhile and while my sis would head to a family favorite restaurant, I always wanted Acapulco in Alameda, CA. That place was awesome from what I remember. It was there that I discovered just how much I loved Mexican cuisine and the thought of the restaurant and the time spent with my dad brings back some awesome memories.
Since then, I’ve made many Mexican style dishes. One of my favorites are tacos. They are fast, fresh and festive. You can do so much with a taco. This time, I went meatless. And put it all together with Old El Paso.
After church today, I headed over to our local Walmart to pick up a some festive eats for a pre-Cinco de Mayo dinner.

So while there, I added a few other items to my cart; green chiles, cotija cheese, avocado and tomato. This had the making for an amazing fiesta dinner.
