A delicious fall Turkey & Kale soup that is also great for using Thanksgiving leftovers.
Fall is here! Happy first day of autumn! Yep, we’re talking cooler temps, wind, rain etc. I enjoy this season since the leaves in the canyons start to change color and it’s quite the display. I love the gold, red and green all together and it’s just breathtaking. Of course fall to me also brings on thoughts of comfort food and soups. This Turkey & Kale soup uses ground turkey, however I would love to make this again using turkey leftovers from Thanksgiving. I’m sure it would be just as good.
I love soups. My mom used to make us soup when I was little. Back in those days, I was more of a chicken noodle or tomato soup kind of gal. Now that I’m, ahem, much older, my tastebuds have branched out to more adventurous flavors, like French Onion or a Ham & Bean Soup. This year with so much kale growing in the garden, I decided it would go into this soup made with fresh veggies and ground turkey. Not only was this excellent, but I can’t wait to try it with my Thanksgiving leftover turkey too!
