This simple, yet tasty pesto pasta salad is a great side dish to bring to potlucks or barbecues. Whips up quick and is satisfying for your guests.
Busy weeknights call for simple yet delicious meals. Sometimes that’s a bit difficult to do and I start thinking Papa Murphy’s might be my dinner solution. Not in this case. Although hubby is always teasing me about the amount of jars in the fridge, he didn’t have anything to say after I made this pesto pasta salad.
Whenever I go to Big Lots or Harmon’s, I usually head to the aisle that carries all the vinegars, oils and such. I’m also a sucker for a good mustard. This means I bring home lots of new foods to try. It also means I have lots of jars in the fridge. This night, that came in handy. I had a container of pesto I picked up at the Downtown Farmer’s Market and it made a perfect pasta salad.
This is a Pumpkin Poblano Pesto I taste tested at the farmers market and it had such a unique flavor that I decided to use it in my salad instead of the traditional pesto I find at the store. With the mega cherry tomatoes I have in the garden, this was a fast and tasty side dish for dinner.
Bowtie Pesto Pasta Salad
- 8oz bowtie pasta (cooked according to package directions)
- 12 Large grape tomatoes (cut into fourths)
- 1 cup chopped fresh spinach
- 6oz pumpkin poblano pesto sauce (or any store bought or homemade pesto)
|Place the cooked pasta , tomatoes and spinach into a resealable container. Add the pesto and stir to coat. Chill at least two hours before serving.|
As summer is winding down, pasta salads are made less often and I think this one is out of this world! This will be a go-to side dish for those busy weeknights. What’s your go-to dish?
