Baked Chinese Chicken Wings




All done!

So I was invited to a fun Sunday dinner and the theme was Chinese. After lots of thought I decided to make Chinese Chicken wings. I'd never made wings Asian style, usually is southwest or cajun.  After I bought the chicken and marinated the wings, the event was cancelled due to 100 degree weather and high winds. Not much fun to have an outdoor dinner in those conditions.

Now I had a dilemma.... what to do with all these wings? I decided some experimenting was in order.  Since they were already marinating, whatever I elected to do would have an Asian theme. I was still going to bake some but the others..... stay tuned.

Here is the recipe for the baked wings:

INGREDIENTS:

1- 64 oz bag of Great Value all natural Chicken wing drummettes
1/8 cup sugar
3/4 cup soy sauce
1 or 2 Tbsp Sesame oil (a little goes a long way)
1/4 cup honey
1/4 cup Seagrams Dark Honey whiskey
1 clove garlic, minced
1 tablespoon ground ginger

DIRECTIONS:

Combine sugar, soy sauce, oil, honey, Seagrams, garlic and ginger in a large bowl. Add chicken to the bowl and toss to coat Cover tightly with foil (or the lid if it has one). Let wings marinate for 3-4 hours or overnight.

Since my plans changed, when it came time to cook, I removed half of the wings from the bowl, sealed them in a container and put them back in the fridge. Those will be used for Baked Chinese Chicken Wings, part 2 posted later this week. In the meantime, arrange wings in a baking dish and pour any remaining sauce over them. Bake at 350 degrees for 45 minutes, basting as needed with marinade.  

Chicken all ready for the oven. 

Using a meat thermometer, check that the internal temperature is at 180 degrees. If not, cook them a bit longer. I served this with a southwest pasta salad and a nice merlot. 


All done!

I really liked the Asian flavor. I'm glad I didn't add too much sesame oil since the flavor was just right. The addition of the Seagrams gave it a unique sweet taste along with the actual honey). This is a great recipe for a summer barbecue and for potlucks.

Schnitzel and Two De-Lish Sides

I've been to Germany a few times and my favorite meal there is Schnitzel. I make sure I eat it several times while there and have not been disappointed. I also just LOVE red cabbage. I've made the cabbage before, but this was one of my first (and certainly not my last) attempts at German Schnitzel. Pictured below is the final result (not the best presentation, but it sure looks tasty). Very very good!

For the Schnitzel

4 pieces pork tenderloin (if it a thick boneless pork chop, butterfly it)
1 egg, beaten
1/4 cup milk
1/2 cup all purpose flour
1/2 cup breadcrumbs
1 tsp paprika
Olive Oil
Lemon Wedge

Pound the pork tenderloin until thin. Dredge the pieces it in a mix of flour and black pepper, then dip it into a mix of egg and milk, then dip it in a mix of breadcrumbs (or panko) and paprika. Fry in oil about 3-5 mins per side.

To make the sauce, remove the pork from the pan then add 1 cup sour cream, a clove of chopped garlic and a 1/2 cup chicken broth to the pan scraping any pork from the bottom. I also use a lemon wedge squirted on the pork for extra flavor.

For the Potatoes

2 russet potatoes sliced thin
1/2 cup of cheddar (or your favorite cheese), shredded
1/2 yellow onion sliced into rings
1/4 cup of sour cream
Salt and Pepper to taste

 Alternate layers of Potato, cheese & sour cream and onion in a baking dish and season with salt and pepper. Bake for 1 hour - 1 hour 30 mins at 375. The cooking time depens on how big your casserole is and oven temperatures vary.  My recipe is for just me and my husband but you can double it if you're serving more.

For the Red Cabbage (blaukraut)

1 jar of pickled red cabbage (or a head of fresh cooked down)
2 fuji apples, chopped
1/4-1/2 Yellow onion, chopped
A few cloves
1 tsp Allspice
1/4 cup red wine vinegar
1/4 cup brown sugar.

 Mix all ingredients into a saucepan, bring to a boil then simmer 15/20 minutes. Cooks up fast and easy.

Southwest Pasta Salad

Easy pasta salad recipe for those warm summer day picnics and good for potlucks too. This one is super easy. I like the addition of the spicy ranch to give it some extra zip. 

 

1/2 of a box of Great Value Radiatore

1/2 cup light mayonnaise

1/4 cup Spicy Ranch Dressing

1 medium red bell pepper, chopped

2 Tbsp Baco's

1 Tbsp Mrs. Dash Chipotle seasoning

Dash of Salt and Pepper

1 small can green chilis (optional)

2 hard boiled eggs

Parsley

Cook pasta according to directions and drain. Mix the mayonnaise, ranch, red bell pepper, Mrs. Dash and the salt and pepper. Add the pasta and Bacos and mix thoroughly. Slice the hard boiled eggs and top the salad. Sprinkle with parsley.

Summertime grillin'

It's that time of year... the weather warms up and it's time to uncover the grill and start cooking outside. I love a good barbecued meal. And, we live in a townhouse complex so we get to socialize with the neighbors while making a delicious dinner. Here is one of my favorite easy peasy meals. 

The steak was marinated in Stubbs Marinade, Country Bob's All Purpose sauce, Mrs. Dash Steak Seasoning and a dash of salt and pepper. Grilled 5 minutes each side (I had a rather thick steak) then 8-10 minutes on medium heat turning a quarter turn to get those cool grill marks.

The corn was seasoned with Mrs. Dash Fiesta Lime seasoning, butter, a dash of salt and pepper and a splash of red wine. I wrapped it in foil and cooked it on the barbecue as well. 

Very yummy and easy dinner. Best part? Not much clean up at all.

Bourbon and Chile Glazed Pork Chops

The great thing about this recipe is you can vary the spiciness by using a spicier chili sauce (like I did) or tone it down with a sweeter sauce to give it some tang. Also, there are so many mustards out there from Honey Mustard to Wasabi, so again, there are a lot of options with this one

Ingredients

1/3 cup bottled chili sauce

1/4 cup bourbon

1 1/2 tablespoons Dijon mustard

1 1/2 tablespoons reduced-sodium soy sauce

4 thick pork rib chops (each about 1/3 to 1/2 inch thick)

Salt & Pepper to taste

Prepare barbecue (medium-high heat) or use a stove top grill. Combine chili sauce, bourbon, mustard and soy sauce in heavy medium saucepan. Simmer over medium heat until sauce is reduced enough to coat spoon, whisking occasionally, about 4 minutes.



Sprinkle both sides of chops with salt and pepper. Brush 1 side of chops generously with sauce. Place chops, sauce side down, on grill. Brush chops generously with remaining sauce.

Grill until cooked through and glazed, about 7-10 minutes per side (depending on grill temp) 

 

I paired this with Spaetzle, however I used a box mix as I didn't have time to do it from scratch

I cooked it according to package directions and added 1 clove of chopped garlic, a big pinch of parsley and some butter. Cooked up very nice and was an excellent compliment to the pork chops.

And voila! Chops, green beans and Spaetzle. Very de-lish and easy too!

My Thoughts: I have my iPod at my office, so I'm fortunate to listen to worship music while working. No matter how stressful the day, positive and inspiration worship music keeps me going. I found this CD to be upbeat, lively and I can imagine the crowd with their hands raised high to God. There is a great deal of emotion and feeling in the music and the lyrics.  It just makes you want to sing along.

My Favorite song on the CD: "Song of Hope" by The Neverclaim. Why? It’s uplifting and I found myself tapping my foot to the beat and cranking up the volume. The title says it all to me; Hope.  Here is just a preview of the lyrics:
