Salmon Burger Wraps

This is an easy, light dinner idea when you don't have a lot of time and want to have something healthier and tastier then fast food or a candy bar.

Sautee two Costco Salmon Burgers in some garlic and a bit of olive oil. I cook them on medium to low to allow the garlic flavor to get into the burger and also I find if I cook them too quick, they get hard and dry and I don't like to eat a "hockey puck." 
When cooked, cut them in half and place two halves on a multi grain tortilla. Add chopped roma tomatoes, avocado and fresh spinach. Add a dollop of cilantro dressing (recipe follows) and wrap it up. Slice in half and serve with rice, veggies or cole slaw. I had a quick and easy cole slaw with it.

This was so good and light. As the days get warmer, cooking inside becomes less appealing and I prefer to either grill or have salads. These wraps are perfect for summertime entertaining, they're delicious without being "heavy." I added the recipe into my Cook'n Recipe Organizer so I can reference it in the future.
My husband gave this 4.999999 stars out of 5 only because there wasn't a second burger for him to eat.
Cilantro Dressing - Makes 6 servings
2 cups fat free sour cream
1/4 cup 1% milk (or less if you like the dressing thicker like me)
1 cup of chopped fresh cilantro
1 Tbsp Olive Oil
Salt and Pepper to taste

Take all ingredients, place it in a food processer and blend till smooth.  My husband also likes to dip his tortilla chips in this "dip."
Cole Slaw - 4 servings
1/2 Head of cabbage, chopped
1/2 can of pineapple chunks, drained, chopped and any excess juice squeezed out
1 Tbsp course ground black pepper
1/2 Jar of Marzetti Lite Slaw Dressing 

Mix all ingredients and chill for a minimum of 60 minutes. If you like your slaw more "saucy" then add more of the lite dressing.

My thoughts
I really liked these natural household cleaning products. One thing I noticed when I used them was there was not that "chemical" smell you get with other cleaning products out there. Some of the leading products leave a chemical smell that stays with you for hours afterward. Not with Natural House. It's odorless and still leaves the house smelling fresh.  

The flushy product is "hands free." I just dropped it into the bowl and it started foaming like a blue volcano. I let it sit there for a bit, scrubbed it out, flushed and it was bright shiny clean. I kid you not! I hate cleaning the bathroom and this made it so much easier for me and again, odor free.

Sinky was the same way. Dropped the capsule into the food disposal and it foamed up. With all the cooking I do, I need an industrial strength disposal anyway and something to keep it clean and fresh smelling. Nothing worse then a stinky sink! Sinky took care of that for me.

"A Perfect Pet for Peyton" book Review and Giveaway

I love children's books that teach life lessons and that have a positive theme running through it. When I was a child, my mom read with my sister and I and instilled a love of books in us. I received a copy of "A Perfect Pet for Peyton" to review.  It is a wonderful children's emphasizing God and also teaching life lessons while entertaining with a great story and detailed illustrations. 






About the book:

This book is well written and beautifully illustrated. I love how the author also has activities throughout the book to share with your kids, such as "find how many insects are on this page." I also liked how the illustrator drew children of different ethnic groups so all children could identify with the characters. 


The book starts out with twins Penny & Peyton's birthday adventure and party at Mr. Chapman's Perfect Pet Pal Emporium. Both the twins and their three friends were going to receive their own pet pal. As story progresses, each child finds adventure, celebrates the birthdays with insect covered pizza, an ice cream sundae of their dreams and open their gifts. But the best part of all is they receive their perfect pet pal based on their own specific love language. Each language is explained and how the pet match is perfect.  


Not only does the author discuss the type of animals but he also gives the readers the specific breed, for example African Grey Parrot and Ragdoll Cat. I love the fact it will stimulate the child's interest in these specific animals. We have an African Grey Parrot so having one as a central character was awesome for me!



The book teaches the kids about the "5 Love Languages" and how each of them are different and how we all need to love everybody in every way. The author also emphasizes that God made each person special.  There is a 2 page quiz in the back of the book where you and your child can determine your child's own love language

Kraut Burgers

So my husband was telling me about a dish his great grandmother used to make called "Kraut Burgers." Now I was skeptical since he absolutely HATES sauerkraut. He said this meal is like a German calzone. So I did some Internet research and found out what they were all about and I was intrigued and curious to make them. After lots of looking at pictures, recipes and blog posts & comments, I decided this was my Saturday night kitchen adventure! 


And I was not disappointed. 


They were surprisingly easy to make and full of flavor. I didn't go with any specific recipe, but picked different ingredients from several recipes, added some of my own flavors & spices and created a Krautburger I can call my own. This recipe makes 12 burgers so if you're not feeding a big group, you can halve it.

I also plugged the ingredients into my Cook'n Recipe Organizer and the nutritional information is not too bad, especially if you drain the grease off the meat well.

Here is the recipe:

1 lb lean ground beef
1 lb pork sausage
1/2 yellow onion, chopped
1 medium head of cabbage, chopped or sliced
2 cloves garlic
1 Tbsp Mrs. Dash Table Blend
2 cans refrigerated pizza dough
2 Tbsp butter, melted
Salt & Pepper to taste
Olive Oil



Cook the beef and pork in a large skillet with the garlic and about 1-2 Tbsp of olive oil until the meat is no longer pink. Drain any excess juice and return the meat to the skillet. Add the onion, Mrs Dash and cabbage and cook on low, covered for 15-20 minutes until the cabbage has softened. Salt and pepper to taste.



In the meantime, roll out the pizza dough until thin and cut into 12 equal squares. When the meat mix is cooked, spoon an equal amount onto the center of each dough square, then fold the corners together to seal the meat inside. 






Place on a cookie sheet sprayed wtih Pam, sealed side down. Brush the top with butter and bake at 350 degrees for about 20-25 minutes until the dough has been browned.


I served the burger with a small salad of fresh spinach and chopped roma tomatoes. Very simple dinner, but very tasty too. I loved the combination of the beef and pork together. I also keep the onion to a minimum since I wanted to bring out the flavor of the cabbage. This was not greasy at all and the meat stayed juicy inside the dough. Plus, the pizza dough not only added a nice flavor, but it was golden brown and crisp. No soggy dough here.


I think this meal would be good for both adults and kids. And the kids would sure enjoy building their own burger too!

Yummylicious Lasagna

Need a quick and easy meal sure to please everyone? Lasagna is a sure crowd pleaser and it fairly easy to make.  Here's a recipe for one I made the other night.

Lasagna Ingredients
1 1/2 pound lean ground beef
1/4 teaspoon salt
1 medium yellow onion, diced
2 cloves of garilc, minced
1/2 lb fresh mushrooms, sliced or a small can of mushrooms
1 (26 to 30-ounce) jar prepared spaghetti sauce
1/4 teaspoon ground red pepper
1/2 teaspoon Italian Seasoning
1 (15-ounce) carton part-skim ricotta cheese
1 (10-ounce) package frozen chopped spinach, defrosted and squeezed dry
1/4 cup freshly grated Parmesan cheese
10 no cook-style lasagna noodles
1 1/2 cups shredded italian cheese blend

Heat oven to 375°F (190°C). In large nonstick skillet, brown ground beef, onion and garlic over medium heat 8 to 10 minutes or until no longer pink. Pour off drippings. Season beef with italian seasonings; stir in 1/2 of the spaghetti sauce, mushrooms and red pepper; set aside.

Meanwhile in medium bowl, combine ricotta cheese, spinach and Parmesan cheese.

Arrange 4 lasagna noodles lengthwise in single layer. Place 5th noodle across end of baking dish, breaking noodle to fit dish.
Spread the beef mix over the noodles, holding out 1 cup. 
Layer the top of the beef with another set of lasagna noodles. Then spread the entire ricotta cheese mixture over noodles.


Layer another set of lasagna noodles then top it with the prepared sauce. Pour the remaining beef mix on top of the sauce. 

Bake in 375°F (190°C) oven 45 minutes or until noodles are tender. Sprinkle remaining mozzarella cheese on top; tent lightly with aluminum foil. Let stand 15 minutes; cut into 12 (3x3-inch) squares.
 I served it with a Cesar salad and garlic bread

My thoughts:
As I said above, I am a new Pinterest user, I joined about a month ago. I have so much to learn! Pinterest is growing by leaps and bounds. As Kim states in her ebook, in the past six months, Pinterest has grown by 4000% and receives approximately 11 million visitors a week. WOW!  Those numbers are phenominal! I find more and more references to Pinterest when ever I am online, whether reading blogs or shopping or researching recipes. When I first created my boards, I was a bit at a loss since this form of social media uses pictures to communicate rather then words like on Facebook and Twitter, which is what I'm most familiar with. It took me some getting used to, but as I have used Pinterest more, I find it very user friendly and easy to navigate.

Kim's ebook gives you step by step instructions on how to create your boards, build them and get yourself noticed. She uses screen shots to illustrate what she is saying making it easy for you to follow along and set up your own boards. She walks you through pinning, re-pinning, adding links, referencing other users and tracking your own traffic. Bacon Wrapped Shrimp and Scallop Kabobs with Couscous

This is a quick and easy recipe for the grill. As the weather gets nicer, it's time to break out the barbeques and cook outside. I love warm nights, sitting outside with my hubby and enjoying the fresh air.

These kabobs are easy and yummy!!! It takes just a few ingredients but yields great results.


Ingredients
6-8 Sea Scallops, rinsed
14 Large Shrimp, peeled, deveined and rinsed
8 strips of bacon, partially cooked
1 Sweet Red Pepper, cut into square pieces about 1" or so
1/2 Red Onion, cut into square pieces about 1" or so
10 button Mushrooms, stems cut off
1 Box of Plain Couscous
Garlic
Olive Oil

Once you gather all the ingredients, just skewer them up. I use the wooden skewers and to prevent them from burning, I soak them for about an hour in water. They also don't splinter as some skewers do. My skewers are bout 12 inches long, but some of the metal ones can be twice the length.

I wrap each shrimp and each scallop with a half strip of bacon, overlapping slightly, and pierce the edges. The bacon will surround the scallops and shrimp and hold in moisture while giving it amazing flavor. I alternate fish, veggies and use the mushrooms for my end caps.

Grill over medium heat until shirimp are pink and scallops firm. Serve with plain or flavored couscous.

The Woodcarver DVD Review and Giveaway


I remember John Ratzenberger from when he was on Cheers years ago. I always loved Cliff Claven and his knowledge of some of the oddest things. He really brought that bar to life. So, I was quite pleased to see him in this movie and he did a remarkable job portraying Ernest Otto, the somewhat reclusive woodcarver with a positive attitude, behavior and faith change the lives of the Stevenson family.





About the Movie:
Matthew Stevenson is a troubled kid from a broken home. When he vandalizes the local church to get back at his parents, Matthew has to repair the damage to the church to avoid criminal charges. While working at the church, he meets Ernest (John Ratzenberger), an accomplished wood carver who created the intricate woodwork decoration that Matthew destroyed. Ernest has become something of a hermit, but reluctantly comes out of reclusion to help repair the church. Now Ernest and Matthew must work together to preserve the church's beautiful antiquity, and along the way, they also manage to restore their faith in God and in life.


My thoughts:
The movie starts out right away with Matthew's destruction of church property and how his parents try to deal with it. The parents are separated and on the verge of divorce and they do not see eye to eye on anything, which has negatively affected their son. In order to avoid criminal charges, Matthew is put to work repairing the damage he caused to the church. Along the way, he comes to know Ernest Otto, a recently widowed man who carved the woodwork Matthew destroyed. With all the bickering between his parents, Matthew stays with Ernest who begins to witness to Matthew. Together they work to restore the church, and while doing so, build a friendship and a renewed faith in God.


I love a heartwarming movie and this one certainly qualifies to be called heartwarming. The characters are likable and watching the changes that take place in them throughout the movie warms the heart.  I loved the way Matthew grows close to Ernest through the movie and I love Ernest's philosophy on life. At one point, Ernest says to ask yourself a question anytime you need to make a decision; WWJD (What would Jesus do?). Such a simple question, yet one we don't often ask when faced with tough decisions. Since watching this DVD, I have incorporated this into my everyday life. I love a movie that solidifies my faith in Jesus and how He affects and influences my everyday life.

I like to take salmon and season it, then wrap it in foil and bake or grill. It depends on the weather. The salmon comes out very moist and deliciously seasoned.

Lemon Pork Piccata Recipe

Thisis a fairly easy weeknight recipe that's tasty and sure to please. I plugged the information into my Cookin' Recipe Organizer and this meal is not too horrible health wise. With the whole wheat pasta on the side, it's just over 500 calories. 
Lemon Pork
Ingredients

4 pork chops pounded flat
salt and pepper to taste
1/2 cup all-purpose flour
2 tablespoons vegetable oil, or as needed
1 clove garlic, minced
1 cup low sodium chicken broth
1/2 lemon, thinly sliced
1/4 cup fresh lemon juice
2 tablespoons capers, drained and rinsed
3 tablespoons butter
2 tablespoons minced Italian (flat-leaf) parsley

 Directions
1.Preheat oven to 200 degrees F (95 degrees C). Place a serving platter into the oven to warm.

2.Season the pork pieces with salt and pepper and dredge them in flour. Shake off excess flour. Heat the vegetable oil in a skillet; pan-fry the pork pieces until golden brown on both sides, about 3-5 minutes per side depending on thickness. Work in batches and do not crowd skillet, adding oil as needed . Place the pork pieces onto the warmed platter in the oven. When finished with all the pork, drain most of the oil from the skillet, leaving a thin coating on the surface of the pan.

3.Cook and stir the minced garlic in the skillet until fragrant, about 20 seconds. Pour in the chicken broth. Scrape and dissolve any brown bits from the bottom of the skillet. Stir in the lemon slices and bring the mixture to a boil. Let cook, stirring occasionally, until the sauce reduces to about 2/3 cup, 5 to 8 minutes.

4. Add the lemon juice and capers; simmer until the sauce is reduced and slightly thickened, about 5 minutes more. Drop the butter into the skillet and swirl it into the sauce by tilting the skillet until the butter is melted and incorporated. Add the parsley.

5.Add the pork back into the skillet and simmer about 5 minutes to blend flavors. Serve immediately. .
